Why this river is eaten as much as it is looked at
The Rhône links two of the densest gastronomic concentrations in Europe, and it does so over 250 kilometres.
In Lyon the bouchon is a codified institution: tablier de sapeur, quenelle, andouillette, cervelle de canut. These are the dishes of people who worked hard, served today to people who do not, and they have lost none of their bluntness. The covered market of Les Halles carries the name of Paul Bocuse, who died in 2018 after holding three stars for fifty-five years, a record nobody has come near.
Downstream the appellations follow one another on both banks: Côte-Rôtie and Condrieu in the north, Hermitage and Crozes-Hermitage in the middle, Châteauneuf-du-Pape and Gigondas in the south. The northern syrah, peppery and tight, bears no resemblance to the southern grenache, round and sunlit. The same river, two worlds.
